Jim Murphy, chief executive of Prem Group, which has ten hotels across Ireland, was in a sunny mood last week. The company’s hotels were opened for business and it spent last month hiring “many new employees”.

Before the pandemic the group employed 1,000 people but had to lay off 800 as it operated all its hotels on a much reduced basis. Last week staff figures were closer to 1,000 again but Murphy said the company was finding it difficult to fill some roles.
